Banana Cake Cookies

Banana Cake Cookies

  • ½ cup Shortening, household, soybean (hydrogenated)-cottonseed (hydrogenated)
  • 1 cup Sugars, brown
  • 2 Egg, whole, raw, fresh
  • 1 cup Bananas, raw
  • 2 cups Wheat flour, white, all-purpose, enriched, bleached
  • 2 teaspoons Leavening agents, baking powder, double-acting, sodium aluminum sulfate
  • ½ teaspoon Leavening agents, baking soda
  • ½ teaspoon Salt, table
  • ½ teaspoon Spices, cloves, ground
  • ½ cup Nuts, pecans
  • 3 cups Sugars, powdered
  • 1 tablespoon Butter, with salt  
  • ¾ teaspoon Vanilla extract
  • 3 tablespoons Milk, reduced fat, fluid, 2% milkfat, with added vitamin A

 Step 1
Preheat oven to 350 degrees F (180 degrees C).

 Step 2
Cream shortening; add brown sugar, beating well. Add eggs and banana; beat well.

 Step 3
Sift together flour, baking powder, baking soda, salt, and spices. Add to creamed mixture; mix well. Stir in pecans.

 Step 4
Drop dough by rounded tablespoonfuls, 2 inches apart onto greased cookies sheets. Bake for 12 minutes. Remove to wire racks to cool. Dip half of cooled cookies into Powdered Sugar Icing.

 Step 5
To Make Icing: Combine 3 cups confectioner's sugar, 1 tablespoon melted butter or margarine, and 3/4 teaspoon vanilla extract. Add milk to yield desired consistency (you may need to add a little extra), beating until smooth.
